Faux Dumplings

We went to the Lifeline Bookfest yesterday at the Brisbane Convention Centre with no aims or goals in mind. I ended up walking away with five cookbooks. One that I have had my eye on for a long time. For those of you who know me, you will know that I love Jamie Oliver. His recipes, his catchphrases, and his work in schools and the community.
I picked up the Jamie's Kitchen (2002) cookbook for $5.00. Whilst I am all for buying Jamie Oliver's books brand new, I have not been able to locate this one in my searches. So obviously I was extremely pleased!
First recipe which caught my eye, mainly due to it looking simple and relatively healthy was the Chinese Chicken Parcels.

These were simple to make, however food preparation time can be time-consuming. The flavours thought are well worth the time!
These serve four people, however we only used half the ingredients - due to only having one bamboo basket and not enough cabbage leaves. However the extra filling we now be used for making steamed buns or gyoza. I love a recipe that keeps on giving!
Ingredients you will need:
1 x savoy or chinese cabbage
2 x cloves of garlic
1 x thumb sized piece of ginger
1 x bunch of spring onions
1 x handful of coriander leaves
2 x fresh red chillies
1 x tsp fish sauce
4 x trimmed boneless chicken thighs (chopped)
1 x handful of water chestnuts
2 x limes (use both zest and juice)
1 x tsp sesame oil
Extra virgin olive oil (for greasing the bamboo basket)
1 x tsp toasted sesame seeds
soy sauce
sweet chilli sauce
Instructions:
1. Remove and discard the core and outer leaves from the cabbage and undo the remaining leave and place them in a pan of salted boiling water for two minutes to soften. Cool them in a bowl of cold water, drain and put to one side.
2. In a food processor, blend garlic, ginger, spring onions, coriander, chilli, fish sauce and a pinch of salt. Then add chicken, water chestnuts, lime zest and juice and sesame oil. Pulse until it is a minced meat consistency.
3. Place a heaped tablespoon of the mince on to one end of the cabbage leaf. Then roll it like a spring roll/ rice paper roll. Repeat.
4. Rub the bamboo basket with a little extra virgin olive oil and place in the cabbage parcels. When they are all in, sit the steamer over a an of boring water, make sure the water does not touch the parcels. Put a lid on top and steam for about six minutes, ensure that the entire parcel is steaming hot (open one to check).
5. Sprinkle the toasted sesame seeds on top and serve with sweet chilli sauce or soy sauce.

Personally next time I would add more chilli to the mince for an extra kick. These are perfect if you are looking for a healthy alternative for dumplings or want to spice up your mid-week dinners. I think once I have made this recipe several times (and don't you worry I will!) It will be faster to make and will enter the recipe category of "easy meals I make for dinner parties to impress the guests". Let's be honest any meal served in a bamboo basket impresses me and gives me nostalgia of gorging at yum cha.
